A Day at Château Climens (1er Cru Barsac) — Where Sémillon Speaks in Poetry

We arrived in Barsac as a small gang of wine people — each from a different corner of the industry, but united by the same hunger: to taste, to learn, and to feel something new in a glass.


M. Jérôme Moitry, the owner, welcomed us with a quiet warmth and guided us through his estate with calm generosity.

No rush, no script — just kindness, curiosity, and an ocean of knowledge: biodynamics, soil structure, herbal practices, philosophy, and the subtle language of the vines.


The Herbal Room — A Biodynamic Apothecary


Our visit began in a room filled with plants — sage, laurier, flannel, and other botanicals drying gently like precious ingredients awaiting their purpose.

These are transformed into tisanes, herbal infusions used to support the vines according to biodynamic rhythms, seasonal cycles, and lunar movements.

For a moment, I genuinely expected a druid to walk in and hand us a warm potion.


The Cellar — Where Wine Does Yoga


Down in the cellar, the atmosphere shifted.

Instead of traditional barrels, we found glass wine globes.  They looked almost like floating planets — round, balanced, calm — almost meditative.

If wine could do yoga, this would be its studio.


And the most remarkable part?

All this complexity is born from a single variety: 100% Sémillon.

Simple on paper, infinite in the glass.



The Tasting — Where Sémillon Writes Its Own Poetry


🍷 Petite Lily 2023

Delicate, nutty, exotic-fruited.

Long, round, silky — with a freshness and minerality that make you blink twice and whisper:

“Sémillon… is this really you?”

Green fruit, exotic hints, a touch of salinity.

Pure, crystalline, beautifully honest — a clean-window view of Climens’ dry whites.

🇹🇭 ส้มตำไทยปูเค็มเบา ๆ — a savory lift that plays perfectly with its saline character


🍷Lilium 2023

My personal favourite of the day.

Elegant, aromatic, graceful — like a well-mannered Parisienne with a mischievous sparkle.

Refined, expressive, beautifully balanced.

🇫🇷 Seared scallops with beurre blanc — buttery, delicate, pure elegance

🇹🇭 ปลานึ่งมะนาว — clean, aromatic, zesty; a perfect match for Lilium’s finesse


🍷Château Climens 2016 (Liquoreux)

The crown jewel.

Golden, smooth, tenderly sweet without heaviness.

Fresh acidity lifting its richness; a smoky whisper on the finish. Barsac at its finest.

🇫🇷 Foie gras torchon with fig chutney — classic, timeless, heavenly

🇹🇭 ข้าวเหนียวมะม่วง — ripe mango + lightly salted coconut cream = sweet meets elegance


I left Barsac thinking that:

Some wineries make wine.

But Climens makes poetry you can drink — and Sémillon is the pen.
